My god there is tons to read, I've been AG Brewing for a long time and now stepping over to the dark side, after much looking and reading I made up a reflux type system. Looking forward to getting your advice.

Some shiny to look at, It was raining here last weekend so I got bored and made this, Ignore the small text on the first pic, I just sent it to a buddy to try and explain the setup, but you guys know what the parts are.

If you are a competent AG brewer you have a massive head start in this game. Might I enquire as to your goals here? are you after rum / whisky (with your all grain know-how) / brandy etc, or are you more interested in neutral spirits and liqueur making?
That still you've build is good for the neutrals, not so good for the flavoured spirits, and I'd hate to see your all grain talent go to waste! a simple pot still will be what you want for the whiskies etc.

Does your condenser cap have a vent hole in it?

I soppose what I'm after is a bit of both, neutral spirit from a cheap source of sugars with a high reflux rate and if I removed the packing and had no reflux, could I not make a grain mash with some flavour and treat it as a sort of pot still. Or am I barking up the wrong tree.
The only copper is the reflux and outlet pipes, if it were esential I could replace the stainless coil for a copper one, and yes there is a vent in the cap of the condenser.

I suggest you get some copper packing in their mate, it will help you produce clean spirits.

Will do Kiwi, how does the copper clean the spirit, I presume it will need to be removed and dried out after eash use to prevent any greening of it, from what I know in brewing thats bad news. At the moment I've got stainless pot scrubbers in place. And like a fool, before I knew better I bought 8 packs of turbo yeast .

The copper reacts with sulfer compounds, inherant in all washes, and keeps them out of the collection jar.
