First pot still operation?

I purchased a small 7.6L "OTS" pot still from NorCalShine. Part of the startup is to run plain water through the equipment for 20 minutes.
Is there a way to test the functionality of my setup by mixing a couple of glasses of wine or inexpensive vodka with some water and not mixing up a mash?

I haven't been able to search the forum for others with the OTS and I'm sure there will be many who would say you "should have ..." but I wanted to see if this hobby was a feasible thing for me and this was a quick way to obtain a experimental still setup.

Also what is UJSM? I can find numerous references but no definition.
