Hello.

I have some rum againg, and already after 3 months, I think it has picked up too much oak flavor (it was a new barrel). I am probably going to let it age another 3 months or so, just to pick up some extra magic, but when I am done, I think the oak will be too over powering.

I was considering making some neutral from an all sugar was to blend it with, to mellow out the flavor, and to lighten the color.

Would this work out, or would it change the profile of the flavor too much? I was considering blending it with fresh unaged white rum, but personally the white rum IMO tastes pretty bad. A good neutral spirit would keep the proof after watering down, and hopefully wouldnt effect the flavor in a negative way.

And experience/tips?

it should not afect the flavor ,just make it lighter.I whould add a small amout at a time let it sit over night to"blend" then if you need more add some.

i've made an old school "cuban" style rum by mixing overly oaked rum and fairly neutral white dog rum and then passing it through charcoal. most of the tannins and a bunch of the color is removed, but it comes out smooth.

i recommend it. it's been one of the better recipies i've made. it came out better than i expected and became a sippin' rum rather than a mixin' rum.

Again, I'm certainly no expert, but if you think there is too much oak now, surely aging further would be detrimental?
