Putting older posts here. Going to try to keep the novice forum pruned about 90 days work. The 'good' old stuff is going to be put into appropriate forums.
Admittedly my first cuts were way off, so the finished result aged for 3 weeks and 4 days over a little oak tastes a lot like old sox. Not that ive ever eaten them.........
However i did another batch taking conservative cuts in the proper manner and it's ageing now with about 1 week to go.
The only problem is it's still smelling kind of shit too...Not much different to the first batch at this stage. It's kind of funny but im not quite sure what to expect taste wise.
Anybody care to elaborate? Should it taste like shelf bourbon in some way?
I should say that ive just finished cutting the 3rd batch from the first UJSM and id say it's starting to smell a lot better as it goes on, but im yet to put it on chips at this stage so i guess ill see...
