Destalking Elderberries

O.K. There are loads of elderberries around right now and I want to make wine and brandy out of them. The problem is that every recipe for the wine requires that the berries are destalked. I did this by hand (while watching the football) yesterday and it took a ridiculous amount of time to get 2kg. I did a quick search and saw that someone recommends running them through a fork. I gave this a go and while it breaks them (not really a problem) it also pulls quite a lot of the thin stalk material into the mix as well. Is this a problem?

I see that loads of people here use elderberries so someone must have a quick method of processing them in the amounts needed for brandies. Also, the amount of berries per U.K. gallon (about 4.5L) is different in every recipe for the wine. I now know that you need a hell of a lot more fruit per gallon for brandy than you do for wine so how much fruit do I put in with an eye to distilling?
