Does yeast die?

When your wash/mash is done does some /all/none of the yeast die from Alcohol % or does it just go to sleep? Same question for temp. If you put your finished wash outside in the cold to clairify will the yeast die or will it come back to life once a new batch is added to the stuff left at the bottom of the bucket. (Is leeves the right term for this stuff?)
