been kinda slow on this side of the smokies. the early season weather killed us, now its getting cold perhaps the last month of season will pick up tho. i got 3 deer in the cooler needing cut and wrapped. one is mine :D got a 224# hog in there waiting to make sausage out of.

this is my sweet italian sausage recipe :)
5 pounds ground pork buts or 5 pounds deer with 20% pork fat or butts
grind the meat coarse italian sausage has texture to it, ya actualy feel like your eating something
5 tsp whole fennel seed
2 tsp coarse fresh ground black pepper
2 tsp crushed hot red pepper.....2 tbsp if hotter sausage is wanted
3 tsp ground coriander
5 tsp anise seed
2 tbsp minced garlic...or powder
1 cup white wine
combine and mix well
i put up in bulk but this lends well to stuffing in casings for grilling sausage.
GOT BAIT?

Sounds good . I like sausage.Ive got a few deer in freezer until jerky making and deer burger time I cured a deer ham same as ya would a hogs ham few years ago.Kept it in cooler till cured.Ya have to soak in water before cooking . I used bacon grease to cook it in . Taste very much like country ham

i think i'd like that. i butcherd about 6 hogs so far. most 250 or less. i sell fresh country sausage 5# for $12 it gets me thru a slow deer season...everyone loves my sausage 8) theres pretty good money in processing hogs for folks

yup shot a couple does an got a buck with my truck. buck cost me 3500 dollars. buck tryed to jump truck nice 8 pointer one went thru radiator broke off an he rolled up hood took out windshield messed up front quarter panel.
mostly with hog we only add salt black pepper red pepper an sage. we buy caseins at the slaughter house. if we saltin em we do it all ourselfs if we makein sausage we let the slaughter house kill em an skin em. hog business is in trouble round here. big company that all the hog farmers had
contracts with went bankrupt. it putin alot of farmers in bankrupt to. contracts is good but only as good
as thems that holds em. never have liked hot house hogs. aint the same taste as ground raised hogs.
time that hog was born til they kilt them hot house hogs been on steroids an antibotics everyday of there life leastways round here.

Last winter 'bought did our deer in--too much snow, aint seen nary a track.
Deep snow don't hamper the moose so much--cut up 'bout 50 so far--most years I do over a hundred. Still 2 weeks to go and I may take one more. Got a good freezer full of triming but will wait until New Years to make sausage.
Pork fat + moose meat--30% fat
salt and pepper and a little sage
great for breakfast
