No spent corn

Post by Maynard »

3r generation of UJSM, and i don't really have any spent corn. My understanding is that I should be seeing some gray colored floating corn by now. Has anyone experienced this at this time frame? I didn't stray from the standard recipe other than adding a bit of DAP to the ferment this generation.
Don't think there are preservatives in the corn. Have the first batches on oak now and they are progressing well and tastes very good.

I have noticed the same , i don't get much spent corn floating, am i meant to try and scape the the top layer off the corn pile ?
Or is there a approx set amount i should add each time i backset ( like say a 1/4 pound) or something ?

cheers gary

Most of the spent corn turns white and sits on top of the cornbed, remove the white stuff until the brighter yellow stuff appears.

Don't worry about it....just add 1/4 amount of recipe every time. Don't scoop out nothing. Sometimes it's a little more...sometimes a little less.. What difference it makes?? It will either be food for yeast or anything left over will work off in the next round or so. When your fermenter gets full..THEN scoop out some old stuff.

Just add 1/4 recipe of corn each time you recycle. You'll be fine. More importantly, just don't over do your backset. Use 20% for backset.

Last time around with UJSM, I didn't add any new corn; I noticed that with this bag of corn, I wasn't getting as many floaters, yet the flavor was consistent, and quite good, so I just kept on. We're not really converting the corn much, if at all, so it never really gets used up, no? Maybe the nutrients, but mine got by anyhow.

I'm kinda backset happy; I'll use as much as 50% or more. I never was good at measuring stuff, and cook the same way. A bit of this, a dash of that. But I'm sure I use 50% or more backset. The ferments get slow at the 3rd or 4th gen, but what the hell...

yeast is like having a party, they eat all the "good" stuff up first, simpol sugars , then more complex,
and so on,untill they git to the starch, then if nothing left there buddies.
