mangoes

hello all i just got bout 30 kgs of mangos wat should i do with them to make a brew . i was thinking that i should check them and scope out the poulp the boil the in water with the sugar the add it to some cold water in my fermenter drum dose that sound right to u guys so far but my dad think i should put some souidem metterbysulfate in with the mango to sterials them dose that sound right to u guys. should i sterials them first or would boil them with the sugar be good enought to make the sterial ?
