Unripe peaches... Ugh!!! Biggest mistake I have made in years!
Took a tree run picking from my peach guy instead of the usual "BEEN SITTING ON THE FRUIT STAND TO LONG" dead ripe ones. Absent-mindedly tossed them in the freezer when I got them home and when I had the time I fermented them. Ran them off and noticed a distinctly ugly smell in the air. Then it occurred to me I normally grade the peaches and freeze the dead ripe ones while letting the hard ripe ones set out to ripen further. This is the foulest spirit I have made in more than 20 years.
Live and Learn... then forget, so I can learn it all over again... I thought I was smarter than that!
