hi

i recently fermented about 3kg of store bought raisins. they had sulphites added to them but after soaking them in water for a few hours they were ALREADY FERMENTING on their own. no wonder people been making wine since forever. it does all the work for you. anyway i added a bit of sugar and a week later i had a brownish, white wine tasting liquid which i then distilled. after 2 runs i got about a litre of 78% "raisin brandy". its OK (a bit soapy tasting) but what i plan on doing is this:

make a new batch of raisin wine with some added sugar. when it is about at 7% and still quite sweet (the last one ended at about 11%) i will strain it out and blast it with the 78% brandy until its about 15-18%. that should destroy any yeast in there. then of course let it clear for a while, maybe set it in oak for a month.

Hello Stillin, what kind of raisins did you use? Black or blond?

i used thompson raisins (dark) but dont know, others would be good too im sure

Thanks for the reply. How much water and sugar for the 3 kgr of raisin?

sugar would be up to you. i should have done just raisins at first to see what their own sugars had... but i didnt.

about 15 litres of water and 1 kg of sugar.

also make sure to shred/mash the raisins after they are re-hydrated

Do you have anymore updates on the raisan port? just tried my hand at making a raisan wine,i used 2 kg. of raisans (sultan), 1 lb sugar, 1/4 tps cinnamon, 1 gal imp. water, 1/5 (1gr) package wine yeast (red star primier cuvee). made 4L of some so so wine but thought some more warm spices would, like a old tawny from down under in the land of wonder. no offence mates. a fine sprit added to it would increase the pleasure.

I still have the 78% raisin brandy, about 750ml of it. I never got around to making another batch of wine, so no port yet. One day though.
