Re: cherry wood
I have used apple and cherry. I've haven't used white oak yet so cant compare to that, I liked the taste that the apple and cherry made. Try it. Tater

Re: cherry wood
There was a high end whiskey that boasted of being aged in cherry casks. I forget what it was and where I read of it, but there ya go. Cherry is a closed-grain wood and would make good barrels, and as far as I know, it's harmless(non allergenic/reactive).

Re: cherry wood
yeh the wood is very light in colour , but when imersed in liquer its very red . hard with a close grain .Only put some small bits in a glass to see the change.
will chop up the rest and store for other batches, now to get the grill going and toast, will do a heavy one first in a litre bottke then a light and neutral.... see what happens.
By the way am adding to a rice and raisen batch i done few months ago, have already toasted with oak and caramel results are ok , lovely colour and not bitter.

I've never had any luck with cherry wood. I must be doing something wrong.

Re: cherry wood
I never did either Iv tryed a bunch of different wood and came back to white oak, Though cherry makes for some interesting BBQ, sort of like eating pipe tobacco
