When is it "over" oaked?

When is it "over" oaked?

I've added 6oz of toasted oak to about 1.5gallons of UJSM hearts and then added 1.5oz of charred oak to the jug and I'm wondering at what I start looking for as a sign of it beginning to be over oaked.

I plan on doing another spirit run on some stripped runs of UJSM and adding that to the same carboy but won't get to it for several weeks to a month. I doubt it will over oak by then, but just wondering what to look for.
