Hey Anuran, welcome, I'm new to this also and I am pretty sure this hobby is extremely addictive. I'm having a lot fun with it. Are you north or south? I'm close to the southern boarder.

Hey, Rubber Duck and Mfradman. I'm in the Portland area. Currently getting an experimental license to (legally) develop my chops and then hoping to jump through the commercial distilling hoops a little down the line. Right now I'm at the plumbing fittings and design stage.

Seriously, everyone's doing gin and vodka. I'm more interested in bitters, liqueurs and recipes people haven't made in a while. Niche-market stuff.
Brandies including applejack and kirschwasser are really interesting since the Northwest is grape, apple and cherry Central.
If it's not too much trouble getting a hescher would be nice. There are so many beverages which have been disqualified recently I'm guessing fellow yidden would appreciate good quality kosher products.

Kosher may be a good way to break into the national seen. I buy Kosher a lot and I'm not Jewish.

heksher isn hard to get for what every you make unless it is for peasch (passover) or if it has any grape in it.anuran wrote: If it's not too much trouble getting a hescher would be nice.
heksher dealing with any amout of grape product, or peasch heksher is a real pain for a small time guy.
for win stuff the certification is easier to get if you by mevushal (cooked) grape juice from a big source with a heksher
