Corn flavor gone after airing?

Post by maxboostbusa »

I have made several sugar, UJSSM, rums and finally decided to go with an all grain. So I made a run of corn likker and taking a sample right off the worm in the hearts at 45% it had a wonderfull corn taste to it and was very smooth. After I aired it for around 32 hours the corn smell and taste is totally gone from the same jar. Has anyone ever experienced this? The recipe was all malted corn 6 gallon water, 10lbs corn 5lbs sugar and distillers yeast. I achieved complete conversion and collected around 1.5 quarts of hearts. Thanks
