Potato starch -> sugar (Amylase or pressure cooker)

Im currently trying to make "poteen". Its an Irish spirit made from distilled potato mash.

My problem is I am unsure what step to take for my recipe.
How can I convert the potato starch into sugar?
Will putting it through a pressure cooker hydrolyze the starch or is it only enzymes that can do that?

So far I can malt the potatoes or can add malted barley for the enzymes but
ideally I would like to use an "all potato recipe"
