After completing my move and getting a few items unpacked, I decided it was time to get back into it! I had to leave all my liquids behind, so no dunder. I'm pretty much starting all over again. I found a place that sells fancy blackstrap molassas for $11 a gallon. Not too bad for the good stuff!
So today I made 2 25L washes. Each had a gallon of molassas, 6lbs of raw sugar, 4 tbs of cooked yeast, and 3 tbs of lime juice for acid. One wash I'm trying Munton's Gold ale yeast, the other is White Labs English ale yeast. I have them in the crawlspace with the boiler where the temp is above 74F all the time. When I run these I' ll be tasting to see which yeast I like best. The distillate will be thrown into a heads and tails jug to be run later down the road. The dunder( main purpose of this) is going to be put into my new dunder pit, a 40gallon trash can. Once the dunder is good and stinky I'll start on my rum washes for real!
Each 25L fermentor will get 2 gal of dunder, 1 gal of molassas, 4tbs dead yeast, and 4lbs raw sugar. The yeast will be from the strain I liked best. Each run will be a slow spirit run.
Once I get a few generations in, I'll be aging on French oak.
