Yeah to what LW said; give it time. Label this one clearly, and set it aside for 6 months to a year, and let's discuss it then.
Besides, what's wrong with being heavy on the "molasses smell"?!? That's my goal when making rum! <lol> Taste often piucks up flavor compounds that smell won't, especially if you have a sniffer like mine that got plenty of industrial chemical abuse(IE: not the fun type...) and doesn't work that well these days. But me taste buddies are fine. Bet you will taste all sorts of neat stuff when you sip it this time next year.

Thanks Larry... I got a new job so I have been busy I but still wanted to try to improve the quality of my rum efforts.
You are right I need to give it more time, but I was hoping the smell of the Dunder would carry across better to the spirit. My stillin shed smelled heavenly during the distilation.
On the bright side I distilled a wine into brandy this week that smells delightful.

You are right about that Barney. The flavors are sweet and very fullbodied. It only seems week in the nose. I will set the bottle aside for a year and see if the nose developes more floral/fruity character.

I don't think this is a good idea. Fermenting in high alcohol conditions develops all sorts of odd flavours, some of which are nasty. I try to keep all my fermentations that are intended for the still at 10 or 11 %. Some folks would say that this is too high and that 8 - 10 % is fine.trial&error wrote: I was under the impression that the yeast pretty much die off when the ABV get to high ~15-18% or if you run out of sugars and do the run they are killed off by boiling them for 5+ hours......
I also like to clear my washes well to try and minimise the quantity of yeast going into the boiler.

Thumper charged with dunder is lots rumminess.

No Larry, I'm not running a thumper... I suppose if I want to get serious about my rum I'm going to have to make a thumper for my rig. The thing is I got six gallons of rum aging in my old bourbon barrel so it is going to be a while befor I need to do another big rum run. All this dunder standing around in my aging room is getting in the way.

UPDATE! The Rum has been a year and six months in the barrel and the nose and flavor are amazing. Very much worth the wait. All my rum is going to go into this very same barrel. I want to see how many years it will contine to turn out a great rum.

Hey Larry, My daughter is always on the internet and I mean always, infact, she was invited and accepted to be one of the site moderators on the site she is always on. Bottom line is Dad gets bumped. As I keep all my 'wet work' on the QT it's not like I can say Get Off the internet so Daddy can post his 'Monkey Rum" success story.
