Peach Brandy is a bit off... baking soda?

So I made up some peach wine a while back and am just now getting to stripping it. I blended about 1/2 bushel of peaches with 8 lbs of sugar into 5 gallons of water and fermented. I didn't do anything special...
Last night I decided to run it... it was still warming up in the still and I looked at my watch and decided to go to bed. Whelp, I figured, I could just turn it down real low while I slept...

Like, all the way off, and run it this afternoon. Anyway, I've been getting a bit of a musty/vinegar smell in the nose, but I can also tell that there's a lot of flavor there and its not too hot. I'm still stripping the other half (only a 3 gallon pot), but I'm wondering, can I mix this up with a bit of baking soda and do the spirit run or will the soda take out too much of the peach flavors?
