Cloadiness after second cut

G,Day All
I know this has been posted before and I have read the previous posts and answers but they don't really relate to what is happening now.
I distilled a grape and orange juice wash I had made up for a brandy, all came out out fine through a de-tuned reflux column, actually very smooth and nice tasting, with a nice aroma. I ended up with 5.5 liters of 89% which I cut back to 9.8 liters of 50% using distilled water. All good very clear, from there it has been aging in a demijohn with 1" cubed pieces of toasted cherry wood a couple of pepper corns, a bay leaf and a touch of vanilla essence.
the Brandy has started taking on a nice golden color with a nice banquet and taste but far too strong. I tried a second cut by adding a little more distilled water to a small amount I poured into a glass and was amazed to see that not only the spirit went cloudy but also seem to loose its color.
Any ideas as what might be happening? I don't want to stuff up the whole patch.
