experience with Flavor

I am looking for some tips on adding some lemon peel to my thumper (standard mason jar is what i am going to use). lemon shine is one of my favorites and i would like to distil some myself and if i could switch out my lemon for some raspberry or peach midrun. (was thinking just unscreew my thumper give it a quick rinse and add my new fruit) want'n to see if yall had any info (amount of zest, size of thumper, ext...) for a newbie! Thanks Yall!

first DO NOT USE GLASS. a broken jar is not good in the middle of run. also the rubber seals can add a flavor you mite
not want.but otherwise adding fruit for flavors to thumper will work.the thumper should be about 1/4 the size of boiler.
how much you add depends on your taste and how strong the flavor is.

good point on the broken glass I didnt think that would happen but good heads up. ill use copper. and if anyone can give me a typical amount of zest to put in my thumper id appricaite it yall. (dont want to over or under do good shine!)

I've found that to undershoot initially and work up next time is the way to go. I have overshot and added more neutral to reduce. It helps, but I prefer the other way. Once you have what you want it's repeatable.
Simple potstiller. Slow, single run.
(50 litre, propane heated pot still. Coil in bucket condenser - No thermometer, No carbon)
