Cheesecake jelly slice

Im in australia we work in metric I know this recipe by metric so im not changing.

Base:

250 g plain biscuits
80 g butter

Cheesecake :

750 g cream cheese
250 ml thick cream
150 g caster sugar
4 tbls gelatin
2 teas vannila essence

Jelly: 1 packet of jelly crystals

Method:

Mix biscuits in food processor til fine. In bowl add melted butter. Mix well. Press into high sided container ( rough 25 cm x 25cm x 7 cm )making flat and compact. Place in freezer.

place all cheesecake ingredients except gelatin In bowl and mix well with electric mixer. Place 75ml of boiling water in small bowl and sprinkle gelatin over top stir until completly dissolved. Then add with cream mixture and stir through. Pour over the top of biscuit base. When all leveled out make " waves " in the top only .5cm high . This is to help jelly hold.

Make jelly up to half packet directions ie if it say 250 ml add 125 ml. Then place in fridge until chilled and thicker but not set. When chilled pour over the top of cream cheese then place back in fridge.

Notes:

in aus jelly is diffrent than that stuff you have with peanut butter.

This recipe takes awhile but its definetley worth it.
