You will be more productive just banging your head against a wall. You ever wonder why Russian always seem to pissed off at the world? It's not the shitty weather it's because they're making vodka from potatoes. It's going to take about 15lb of potatoes to make one quart of vodka. I've tried it a couple of times and failed miserably.

potatoes are 17% starch if I remember right, so it takes a lot of them.
so unless you git them for free or close to it there not worth bothering with.

Wheat and barley are pretty good choices, they have a good amount of starch and are easy to work with. Sugar cane would be the easiest I would think.

Gotta agree with the guy's here, just too much work for potatoes, expensive as well...

If sugar is in short supply, then it aint that hard to do a conversion from the grains the guys have mentioned above...
Thats how the big boys do it...

something iv done, wheat malt ,thrown into some potato "sup" made from last years potatoes. this way i used up the left over potatoes and had the yield of the wheat.
contrary to popular belief little alcohol is made from potatoes.
i cooked about 50lb/25kg of potatoes in 40 gallon of water until they was "sup"
pored this into a barrel, when cooled to about 150f /66c stir in 50lb/25kg of crushed malted wheat.
dont remember the yield but it was not bad.it did make a good "pot still" vodka.
used to grow all or most all my own food, vegetables, and fruits etc and was always looking for was to use up last years.this recipe mite not be exact as i never really went by a recipe just went by the seat of pants depending on what i had.
ya bring back memories canned beets makes something like brandy, carrots make a mock whisky.then of course had caned berries and anything left over as needed to make room for new and last years whould go "mushy"..

A buddy of mine was poking around the grocery and came across potato starch.

Would this be a good way to get a little higher conversion without the hassle of using raw potatoes?

I have no idea but told him to try to convert a little and see if the yeasty beasties liked it...
