a little help with an air still

I purchased an air still recently off of ebay and I have a couple of questions.

First off my still has a thermostat so I can dial it in at certain temperatures. But other than that it is your standard 4L air still.

I used it last night for the first time and I poured in a bottle of wine. I was a little concerned because every time it would hit its desired temperature it would turn off the entire unit including the fan on top. Then it would fire back up after a few moments. So obviously it wasnt cooling down the coils while it was pausing and Im sure that affects the efficiency. Correct?

So if I just plug the top unit straight into a seperate outlet instead of the base unit that should solve that issue right? I just didnt want to blow up the fan unit since the plug doesnt indicate any kind of polarity.

I did the bottle of wine and thought at first I would get brandy. But after some time I only got clear ethyl. Is that because my temp was too low?

I just dont quite understand how to get your flavors and colors to come through to the other side of the still.

LASTLY! the unit came with a steel mesh stand that fits inside. I guess this is for essential oils. How in the hell is it used?

anything that has been distilled will /should be clear. the
color comes from either wood,or in case of much of US brandy's
it has fruit/flavorings /sugars added after being distilled.
