
I like my whisky so I haven't modified or tried anything different, just ferment, run, ferment more, run. With the roof on the church, kids piano lessons/karate/etc, working on the truck, working on my racecar and his dragster, working on several other racecars, planting the garden, being on call 24/7 with the job.....plus the honey-do list...

So, I make whisky, age it in glass carboys with medium toasted hungarian oak and enjoy it when I get a second. I don't even feel like I'm "moonshining" or whatever, just like making a loaf of bread, eating it, making some more. Some people go to a liquor store, I go to the garage. Lately though, I've spent whole weeks without a drink just because too much else is going on, not that that is good or bad, just an observation.
Anyway, if you wonder where I am or what I'm up to, I make some when the stock is low and enjoy it while i can. I just don't have much time to be on here helping others which I do enjoy. Speaking of which, one of the guys in my shop makes wine and dumped two 40L batches out when they went bad! I almost shit! I told him what I do and let him try some and he was very impressed. Now he wants me to teach him to make brandy with good wine and neutral with the bad. (something else to do...)
