After a good bit of searching I haven't been able to find anyone trying to replicate Kentucky style Bourbon with wheat. I know Maker's Mark (my standby but not favorite) uses a larger proportion of wheat rather than rye in their grain bill. I'm not a big fan of rye, I'll drink Wild Turkey when I want to look tough, but personally I like the smoother bourbons, Four Roses Single Barrel, Woodford Reserve, or Pappy Van Winkles on payday. I've got a handful of different whiskey runs under my belt and now that I've got the fever I'm engaged in developing my own recipe for Kentucky-style Bourbon. I currently have some twice-run all-grain corn whiskey aging in a barrel and I'm very pleased how it turned out. Now that I've got the corn down I'm looking for different grains/adjuncts to start building my profile.
I've made NCHooch's Carolina Bourbon with a lot of success. I've done a few good sourmash runs that turned out great as well, they haven't aged very long, but my personal taste is more toward Kentucky "sweet" whiskey. SO, does anyone have a tried and true for bourbon using wheat or only a little bit of rye? OR, anyone have any other copycat Kentucky Bourbon recipes they'd like to share? I'm passionate about Bourbon. Thanks!
