Pectic Enzyme VS Alpha,Gluco
Will soon be making mashes from pears, blackberrys and muscadines.
Most fruit recipes i come across call for pectic enzymes to be used to breakdown sugars.
Can Alpha or Gluco be used instead, or are they used strictly for grains?

alpha/glucose is for starch,,,pectic breaks down pectin that is in cell walls.
this is not as a necessity in distilling as it is in wine.there is other methods
like freezing.

Also, fruit has the sugar already available for the yeast. No conversion is necessary with fruit, like it is with grains. Crush or freeze and go.

thanks for the prompt reply.
so freezing will help in the place of pectic enzyme?
i planned to make wine with the blackberries and muscadines
and distill the pear mash.

Freezing will break own cell walls in the fruit/berries makes it easier for yeast to get at sugars.heefageLA wrote:thanks for the prompt reply.

I use a pot still.Sometimes with a thumper

freezing fruit will help release the juice inside the cells,i made wine for years and never knew of it. it is more of a wine thing that helps clear the wine as some fruit will have a "pectic haze"
and if you distill you do not care if clear or not..

alright. I will most likely freeze before I crush and then add some heat to get the temp back up.

give ya a hint not that i know a heck of a lot about berries,but.
git a spay bottle,fill with water and a bit of k meta..when you pick lightly mist your
bucket as you dump in berries .
