use old fruit for wash?
I've been doing a lot of reading about different fruits you could use as a wash, but I'm assuming that they are using fruit at the peak of freshness. I have a little different take on a fruit wash, and wanted to know why it wouldn't work. A few weeks ago I bout a watermelon that tasted mealy. Then last week, I cut onto a cantelope only to find it tasting like alcohol had already begun to form. Why couldn't I stock pile any fruit that is just past prime, freeze it, and if I gather up enough I could use his as my sugar source to make a mash, right? I'd like to try to do something with any old fruit I have. I know some fruits can produce methanol, so more heads could be discarded, but this could work, right? If some off flavors are produced, I could just put it into my next run and redistill. Thoughts?
