Putting older posts here. Going to try to keep the novice forum pruned about 90 days work. The 'good' old stuff is going to be put into appropriate forums.

too strong?

Post by effyeah »

I wasnt sure if i was meant to post this in here or not but ill ask anyway, iv for the past month been making Hook Rum and its a great recipe. i done about 6 or 7 stripped runs and i started my spirit run the other day. I started off with 30L off low wines in the boiler, i got up to heat and started pulling off some 75% this quickly climbed up to 80% then 92%. i was expecting this really strong alcohol to drop soon but it didnt it stayed around 92%-90% and took 7L. i ran it really fast and hot to drop purity and it dropped to 85% but my condensor/pump could only handle the heat for about an hour. i ended up not finishing the spirit run because i had some stuff that popped up. it didnt even look like it was going to drop more without heating it heaps.

so my questions are

1.wil this high abv rum not have the flavour that it should?
2.is it correct i should be collecting between 80% and 70%?
3. is there anything wrong with stopping a run half way through? do u just pick up againg taking hearts? or is there heads again?
4.can this all be fixed by blending some tails with all the hearts?

just for the record it was ran through a pretty tall 3 inch bok with no packing.

thanks in advance
