I need a bit of guidance or assistance in determining what I have in my pot.
Using 6 gallons of cold water, I added 5 pounds of flaked corn and brought the temp up to about 140F degrees. At that time I added 1.5 pounds of 6 row Barley pale and continued stirring and giving the mixture heat until it reached a temp of 150F. I turned off the heat and stirred the pot every 15 minutes for 2 hours then let sit over night. I have checked the pot this morning. All solid material has settled to the bottom and a clear, straw color liquid is on top.
I spooned out a small amount of clear liquid into a saucer and added 1 (one) drop of iodine. NOTHING turned blue which tells me that conversion has occurred. However, I stirred the pot bringing solids off the bottom and turning the clear liquid milky. I spooned out some more liquid that contains sediment and placed that in the saucer. I placed a drop of iodine in the liquid and I had a slight change in color (sorta blue but not really blue) but it was not the color of iodine. This tells me that I still have some starches present. What must I do?
1. Will there always be some starch present after conversion when you stir the pot?
2. Should I be able to stir the pot and have the same reaction with iodine as I did when I spooned off some of the clear liquid?
