Where to start?

I am back into our hobby after a 3-4 year layoff. I have a pot still and have had a lot of success with my 1.) molasses and 2.) sugar washes with tomato paste nutrient (1-2 mini-cans per 5 gall). I have missed you people. What happily brought me back in is I now have virtually unlimited amounts of fruits and vegetables and I want to give this a try but am confused as to how to start. I've never done these before. The posts I am reading are skipping over the very beginning steps. I have juiced gallons (each) of grapes, raspberries, orange, kiwi, strawberries, plums, and cherries. First, do I heat them, say 90 degrees or let them begin with my EC1118 without heating them? Second, do I let them ferment by themselves or do I add water to lessen the (sometimes) thickness of the juice; and if so, does it need diluted sugar in the added water also? Lastly, what should my hydrometer/alcometer read before and after for a successful run? Thank you in advance.
