yes,
you are just not blending pure oils, you would be using diluted essences in alcohol called tinctures,
that’s what Bombay does, blend tinctures created by infusion,
if you ran the still with single botanical s with no alcohol and only water then you would extract the essences and they would come out condenser and float on the hydrosol, which then needs to be separated using an essencier,
then you have pure essences (oil based) and essence infuse water called hydrosol,
the amount of botanical s needed to get pure essences is huge,
it takes 40,000 rose pedals to make one oz of rose essence oil,
so hydrosol is way cheaper and more practical in making,
because of the small amount of botanical used to infuse gin flavours (on hobby scale) the oils would be measured by drop's,
not ml,
hydrosol can be used to flavour gins but dilutue the alcohol percentage,
which could be just fine as long as you don't go below 40%,
so i can see using essecial oil and hydrosol to flavour gin,
but it would be very easy to add to much flavour this way,
if you screw it up you can allways through it back in the still and run it again,
looking at it this way makes gin a medicine,
