I bought some Prestige WD yeast awhile back, and have just gotten around to using it.
I have an 8 gallon mash that is at SG 1.090 before adding the yeast.
The directions on the packet says to use 1 packet per 25 liters (6.6 US Gallons). Should I be ok with one packet, or should I add two for safe measures?
By the way, the make-up of the mash is Corn, Corn Malt, and Sugar. The SG of the grains was at 1.050 before adding the sugar to bring it up to 1.090.

If this WD Prestige is just yeast, you will be fine. If it is like a turbo with all kinds of ingredients to propel growth & a speedy fermentation (I ask this, because I don't know WD Prestige - what is it?), then ... use bakers yeast instead. Corn mash needs a normal yeast, not a package containing all kinds of PH stabilizers, fertilizers, etc,.

No offense, but I'm not going to use baker's yeast. I'm a long time winemaker, and have never touched the stuff.
Plus, wouldn't the baker's yeast die out with the high abv potential of this mash?

You can easily achieve 10 to 14 %ABV washes with bakers yeast. You could probably get a little more than that. I prefer 10 %ABV wash.roostershooter7 wrote:It's this stuff.

I'm a longtime winemaker too.
And I can say without reservation that bakers yeast or bread yeast works great for many applications in this hobby.
I'd rank it right up there with that fancy whiskey yeast with AG.

But the WD will work fine. We don't have exactly the same brand over here, but an Alcotec version. Same ingredients. Now that you have it, use it. It will do the trick. For next time: know that baker yeast will do the trick just as well (maybe better?).

I concur with above. Especially because you added sugar and the Prestige yeast isn't designed for sugar washes, but All Grains up to 8%.
As far as bakers yeast not being able to tolerate high alcohol conditions (which you don't want anyways): A buddy mine didn't properly convert the birdwatchers neutral recipe (his first wash ever), put too much sugar, and ended up with a potential alcohol of just over 20% ABV. The bakers yeast fermented it completely dry. Just sayin....
