hi is better if i brink the water to 5.2 with a 5.2 buffer for doing my mash
and if can i use the water also with the buffer to cut my mix to 40%

if you want to use in mash but not necessary to cut with.

The 5.2 ph is the ideal ph for the enzymes to convert starch to sugar ....lot's of brewers use it to maximize efficiency in the mashing process. I've never used it and can easily hit 75%...but consider it good insurance, so it you have it, by all means use it for mashing.

As far as diluting your spirit to 40% ...best to use distilled water for that.
