Adding fruit to distillate

I was experimenting with adding fruit to my distillate. My wife was making a fruit salad and was cutting up various fruits. I took a handful of the mixed fruits put them in a mason jar and poured in 150 proof neutral spirit.

I let it sit for a few days. When I opened it, it tasted really good. No bite, no harshness. However, eating the fruit was not a good idea. It tasted really, really bad.

My question is does the fruit absorb most of the alcohol leaving just flavor behind. Or does the fruit remove the harshness of the high proof distillate?

Also, how would I be able to check the alcohol content after the fruit had been added? I don't think my "proof-meter" would work in this situation.
