Apple Wash

Just wanted to let you all know about this last run I did. It turned out some amazing likker. I work in a homebrew supply store and an old fella approached me and asked if I knew any recipes for apple brandy. He went on to tell me how he used to drink it overseas when he was in the war. I told him I would do him one better and we'd turn his apple mush in to something like an apple brandy. He brought me two gallons mason jars full of juice and pulp from apples he picked up. We then threw it in a bucket, added water and enough corn sugar to bring it to about 1.060 on the hydrometer. Tossed some pectic enzyme and Fermentis yeast (made specifically for fruit washes). It took it sweet time fermenting, but it was well worth it. I ran it nice and slow through a CM still and collected everything from 90% down to 40%. Ended up balancing out to about 3 liters at 70%. I cut it with some good commercial apple juice down to 40%, poured it off into mason jars with a couple slices of apple and 1/4 stick of cinnamon stick in each jar. It tastes like apple heaven in a jar... The only way I can describe it is like apple velvet in your mouth. Delicious! Will definitely do this again!
