Anybody heard of a problem like this?? I tried my hand at grappa and had 11 half-pints of product in jars sitting on a shelf in the bedroom. Sitting there for 6-8 months. I noticed the odor of alcohol and when I looked closer, I found this. (pics) the stuff was about 50% at beginning and 40% at the end. Tasted OK, I guess, (? I never tasted grappa before, dont know what its supposed to taste like) Tasted like VERY DRY wine at first and VERY VERY! DRY at the end of the run.
I used about 12 gal water, 5 gal pomace, and 10-12 lbs sugar. boiled sugar in water. cooked and dumped in fermenter with grapes. no yeast. started bubbling in (it seemed like) about 3 minutes. In + - 5 days it was done. Ran through pot still not too fast as I distilled on the pomace. (I made a basket from a spaghetti cooker and had the grape p. in a burlap bag, no scorching). Tasted pretty good. New Ball and Wal-mart (generic) canning lids. Then the smell. 2 lids, the centers fell out, 2 almost. All rusted badly. All tossed, rust had fallen in the jars & discolored the product. This has never happend to me with regular (corn) product.
What gives?? Anybody?
