Apples and PEARS

Hello
My brother has one apple and one pear tree , in his garden, both of them full of fruit, I call them the old English variety, he said I can have all the fruit on them, I want to grab as much fruit as I can but I am not sure how long they will keep for.
Is it possible to keep them for a couple of months? I just wish I had a large chest freezer, I want to use them to make apple/pear Brandy, for brandy , do they need to be fully ripened?
