Will be only my third batch of shine I have ever made. I recently decided to try and make some brandy because I know so many people with apple and pear trees that would give em up for free. Just messing around for a couple hours the last two days I have picked 70lbs pears and 180lbs of apples. Ive looked at a few recipes but most of them involve sugar and I wanted to keep my costs at zero. Only because I think it would be cool to have %100 free booze. I am using a keg so I want to keep my wash to about 13 gallons. I wasnt sure if I should mix apples and pears or separate them into different frements. I read taters fruit/ berry recipe but he uses alot of sugar. He then goes to say that if you dont use sugar put more fruit in. I am not sure how much. i am sure i am wrong but ill put down what i am thinking. Since apples have 11.8 grams of sugar per 100grams of apples I figured I would have about 10lbs of apples per pound of sugar. So to Keep to about a pound of sugar per gallon of water I would have 10lbs of apples to every gallon of water. I know fruit has a ton of water in it so I was going to mash about 130lbs in my fermenter and crush them up in it. Then add water till I get to about 15 gallons of mash. Does this sound right? I dont want my wash very thick because I dont want to burn it in the broiler.
