Ongoing fruit ferment, or freeze??

Ongoing fruit ferment, or freeze??
My wife and I eat a lot of fruit but we usually still have some at the end of the week that goes in the trash. I was.thinking of having a carboy and getting a small wash with yeast going and throwing the bits and pieces in whenever I some leftovers. Would this work as a long ongoing ferment, or should I just freeze the leftover bits until I have enough for a full wash??
