this recipe was developed by me over this summer. the end result is some pretty decent spirits that have that old school corn whiskey taste. i normally start with a 10 gal batch, and go from there. 5 lbs cracked feed corn ..10lbs plain sugar...10 gal water...1/4 cup lemon juice. 2-paks ec1118, or redstar cuvee
i take the 5 lbs of corn and put 2 gallons of water on it and boil it for 45 min or so, stirring like hell so it doesnt stick to the pan as the starches begin to change, then let it sit while i put a few lbs of sugar into gallon jugs, then run hot tap water in to melt the sugar,, cap it and shake it good to dissolve the sugar, when i do this... i dont always have a set amt of sugar in the jug, but always make sure to end up with a full gallon of mix, so my water amount stays the same...i add the converted corn and its water to my fermenter and add all the hot water\sugar mix until the ten gallons worth is complete. after making sure the temp is low enough to not kill my yeast, i pitch it with 2 paks of lalvin Ec-1118, or Redstar Cuvee, which has been started in 1/4 cup lukewarm water w/2 spoonfulls of sugar dissolved in it...lately i have been sprinkling regular oatmeal on the top to form the cap, it falls after a few days, and ive noticed a bit better taste after distillation.
