As I was striping the UJSSM . Around the 4th quart it started to taste good so I slowed it down and pulled out a drinking pint of 60%. I like this better than the SF..So it seems to me SF = strong flavor UJSSM = Medium flavor, and I expect Bird Watchers to be Light flavor. So I heading toward a Birdwatcher mix next ... For me that SF is hard to drink.

SF NEEDS a good 6 month on oak to settle down and smooth out, then it ends up more complex and tasty than UJSSMW. Much longer delay to drinking though (and UJ is good regardless!) BW is effectively neutral if double run with good cuts, or if refluxed. try Deathwish wheat germ whisky for a light whisky

I absolutely agree that SF needs more, maybe much more, aging than UJSSM but I'm not sure that 6 mos on oak would be over-oaked. I have read some here say you can't over oak IF then aged long enough in glass, but I don't want to age 3-4 years. I have 2 1/2 gals of SF in a new Gibbs barrel for 6 weeks and IMHO a week or so more will be just right. I will then continue aging in glass for another 8-12 months and suspect it will be great. My UJSSM after 3-4 months in glass with charred white oak is hard to beat and just gets better the next 6 months in glass with no charred oak. I am looking forward to tasting the SF after the keg aging and additional glass aging.
Has anyone tried blending properly oaked and aged SF and UJSSM??

vodka? Whiskey,vodka,rum,scotch,are all the same except for flavoring and aging. intresting""
not really...whisk(e)y has to be made from all grain,,,scotch is a type of whisky,, rum is made from any sugar cane product,,,vodka can be made from anything but is distill until it has no flavor or so little its not recognizable.
