I'm dry macerating cherries with sugar to pull out all that good fruity flavor to add to some rum. I've seen some directions on how to do this, I just haven one question that I couldn't find the answer to. When I'm macerating, do I put them in the refrigerator to keep cool? Or should it sit at room temp? Or does it even matter?
