When running my still, can I realisticly not use my thermometer and just run of the ABV??
I was running in pot mode and the temp was a little high 85deg but it still was reading 80-82./..
Thats what got me thinking to just follow the ABV and adjust accordingly.

that's a little hard to answer without knowing what kinda still you have, but ya, there's' nothing wrong with running it by abv, or by take-off rate. Honestly, I think the only still that should be run by temp would be a bok or the other LM columns...and even those don't need to be run by temp.

Considering how you cannot control the temperature of the boiler or distillate vapor a thermometer only tells you what is happening but you can't make changes based on readings... Same goes for using a parrots beak and alcoholmeter... You can see where you're at but can't change what is happening... All you can do is regulate take off rate by adjusting heat input...Beyond that, you get what you get...
