What a great learning experience!

I just finished running my sacrificial alchohol run. I used about 2 1/2 gallons of old crappy wine and a gallon or so of water. As the first drips began to appear, it occured to me I was extracting the alchohol out of the wine, just like I will be out of the mash. I waited until I had about 3 or 4 oz. collected, then took a teaspoon and cought a few drips for a taste. It tasted a little "winney" but very strong of alchohol, and "bitty". I assume even this seperated into "heads" and "hearts", because I waited for about another pint to exit, then tasted again. There was a world of difference! It was much smoother and not near as objectionable.

I know this was a sacrificial run and is basically crappy, but I learned a lot watching the process and tasting the difference in the different "cuts".

Tomorrow......the good stuff! :-)
