Just a straight forward question I have not found yet.
I have read that washes high in pectin (apple for example) will produce higher levels of methanol. Do pectic enzymes (generally an apple/fruit wine clarifier) alter the course of potential methanol production in any way or do the yeastie beasties still process the broken down pectin into methanol?
