Best way to recover alcohol

I am working on several apple and banana fruit mashes and I have a few questions. Does the cap always drop? What is the best way to recover the alcohol? When the mash quits fermenting could you stick your siphon through the cap and get the alcohol, or should you always strain the mash through some type of cloth.
