My First Distill

My First Distill

After reading for weeks and finally completing my 5gal all copper -pot still, my ferment was done, still was steamed and checked , and a sacrificial boxed wine run had been completed. yuk on that by the way smells like ARSE
last night I ran my first distill run using UJSSM :D
This was also my first ferment btw.I let this ferment for ten days, bubbling at the airlock stopped after day 5. I didn't have a beer hydrometer to know the SG of the beginning mash so that sucked.... and the one i ordered and finally received in the mail didn't have inclinations below 1.000 arg. But.... the finishing SG was way above the 1.000 mark by measuring the scale I'm thinking .994 .992 (i know this was probably not calibrated for beyond 1.000 but its what i had at the time.)
Racked off the wash keeping the corn in the bottom scraped off old dead corn ,added new corn, and added my new water to keep yeast alive (have some other questions for that but thats a different topic)

Everything seemed to go well.... My temps seemed higher than I expected.I have a boiler thermometer and a top of column thermometer,Its probably overkill but I think its cool to know whats going on. To produce at 1-2, 2-3drops a sec my boiler temp was ranging in the 198-202 range and then started receiving product at the top of the still at 180ish but mostly in the 188-195 range the lower wines came thru in the 200 -205 top of column range. (i think most of my foreshots came thru around 165-170 range because I produced a small minute amount but went ahead and collected the 150ml as the recipe stated) maybe i need to hold the temps longer at the lower temps to see if i produce?? :?: The top of still thermometer is regular kitchen thermometer not sure if its a specific "steam" one maybe need to look at a different one. or just go by feel instead and keeping the drip rate right???
This run came out well I think, The highest I was able to collect was a pint of 65%. then a pint of 55% and and about two pints of 40%. Even without the hydrometer you could definitely tell the difference in cuts, obviously Im no master stiller making cuts but I was a little apprehensive about this part but could def the difference where the good stuff was .... and the not so good stuff. i could have made some finer cuts i think by tatse but most of it is going back into the next run anyway so it was for me to play anyway.

Anyway just wanted to thank everyone out there for all of there informative posts and asking the questions i had. Definite thanks to Uncle Jessie for your recipe and all of your knowledge! I have a batch of Birdwatchers brewing right now and the sour-mash going also.

Oh by the way my garage was about 50 deg when i was stilling so my bucket of UJSSM was waiting for the warm backset had cooled off to about 60 also. so before i added the sugar/backset i brought the bucket in to warm up so it wouldn't be such a temp extreme when i add the backset so i set the bucket into 80 deg water in the sink to help level out the mash temp. within 30 sec of being in that water it started bubbling again even without the added sugar!!! yeast is an amazing thing!!!!!

Those temps are pretty close to mine and I also have the two thermometers like you said not necessary but it gives me an idea when I am getting closer to final heat up as I then cut it from 22 amps to about 18 amps then equalize for an hour before I start collecting. I have always allowed it to equalize for 45 min to usually an hour which is typical time allotment mentioned hear. Last night in reading the compleat distiller they suggest allowing 2 hours to equalize before takeoff.

Yeah i kinda did the same heated up to like 120 fairly quick then slowly brought it up to 150 then a real slow creep up to 165-170+/- sat there for awhile thats where i think i got some forehots then brought it up slow to where i was collecting. roughly what temp are you equalizing at? or just when it starts getting hot?
i can say that i need a better regulator on my burner so touchy lol. Using gas definitely makes you think about switching to an element lol.

Im using a Claw-hammer supply 5 gal still. i liked the looks of it and copper prices. but ill try to post a pic

I also have the clawhammer 5 gallon. After 5-6 more runs you will see those thermometers are just something to look at. How big was the grin on your face when that first drip came out? :ebiggrin:

Congratulations on your first run.
I don't run a pot still, but from what I have read, you can run a lot faster than drips on your first run. Then slow it down for your spirit run.
And yes them yeast are some amazing critters!

Thats funny you say that cause i think my face hurt i was smiling so much .
yeah im glad i had the thermometers now just so i can see how the still reacts. it was interesting watching the column thermometer rise and fall as the steam would roll through the condenser.

have you ever used the copper mesh in the column?

Yes I use mesh on my spirit run. I am not sure how effective it is, but I still use it. My normal procedure is to make 10 gallons of mash. Make 2 strip runs and throw out the first 5-6 ounces in each run. I collect in 1 gallon wine bottles, then cut those to 30% and make a spirit run. For the spirit run I pack the column with copper mesh i purchased from brewhaus.com and after i toss the first 5-6 ounces i turn the heat down and run it as slow as i can stand it.
I dont get as technical as I should with what and how i collect. I am collecting pieces for a parrot this week.

yeah thats what i think im going to start doing is making 10 gals for two runs....
i picked me up some mesh yesterday so we will see how it goes. im looking for some flavor with the sourmash so i dont want it stripped to far so some experimenting will be in order.

Unless you have some reflux going on top of your packing it will do very little if any good.
If you do decided to try it you may want to give the mesh a good boil in water and vinegar to get the machining oils out of it.
The reason it needs reflux coming down on it is because it kind of works like a "plate" in a plated still. As the vapors try to come up the column they have to bubble up the alcohol coming back down and it tends to knock some of the water down. The end result is higher ABV by the time it makes it to the top.

i considered running a 1/4 inch cold water pipe near the top of the head to get some reflux, but decided to leave it alone. I figured it is a very good pot still head and did not want to screw with it. my new plan is a 1/2 keg boiler with a pot still head. use the 1/2 keg to strip, cut it to 30% then use the clawhammer to spirit run. that way i can run 2 and every time i play in the garage i am coming away with a nice batch of 2 run whiskey. and i can build a boka head for neutrals to fit the 1/2 keg if i want to make some neutral. that is my long term goal at least :-)

Hi all
I have just built a 2" reflux still column packed with Raschig Rings, and a beer barrel with 3KW electric heater element, heater element controller home made.
I have finished my first run on my still could not work out why the thermomiter was rising and falling, even though the element was set to about 78c, i have just read on the post above that this happens.
Does this happen to all reflux stills.
