I am a novice using a homemade stainless steel pot with copper condenser in a bucket o ice water. My question is: For what reason would my wash start producing only at temperatures above 195F?? I do a 4 gallon sweet feed and sugar wash using champagne yeast. I get one pint of good hearts which seems to be around 45% ABV and a pint of weak tails. This seems off. The ABV and the amount seem off. Thanks

Welcome Ronnald. What exactly were you expecting? The boiling point for something that is mostly water (a wash/mash) is going to be closer to the boiling point of water than it is ethanol. And there's only going to be so much alc in it to start with. Have you read the threads under General Stilling Questions in the new distiller reading lounge? Those points are addressed directly.
