I was under the impression you were supposed to do that anyway,,you keep adding more alcohol to the fruit until no more flavor.then mix/mach all together.

What Fruit did you use.. Frozen Fresh..???...

Clear Brandy...
Did anyone try just off shelf store??? what about the "colored" or only clear??

Vodka...
Personal batch or store??

Everclear...??

Just trying to summarize since we not have almost 30 pages to run through.

My post was 1-2 pages ago, I tried several fruits. The best was definitely the frozen strawberries. Pears don't yield much syrup. Canned peaches that were frozen and thawed in the alcohol are probably 2nd best. Lots of syrup but not much flavor like the strawberries. Pineapple tastes good but after a couple of weeks with little syrup formation I had to pour in a cup of boiling water and shake it around to "forcibly" extract the syrup. Blueberry and blackberry are coming along nicely but take more time. Strawberry is definitely cheapest (I got a 4lb bag of frozen ones for like $8) and also work the fastest. I used 65-70 abv neutral (birdwatcher's sugar wash).

SPD is Great!

My first experiment with SPD I made 1 qt and 2 pt of strawberry, 1 qt of blueberry and 1 qt and 1 pt of pineapple:

The Blueberry I used UJ (100p) took a little longer but it is for me only so thats ok. Have only tasted it a little here and there. I havent had the time to sit down to enjoy it yet. Because....

The Strawberry I also used UJ (100p). The day I was finishing these up my girlfriend stopped over, so after a 'show and tell' of what I made and 1 pint of SPD over sprite consumed, the qt left with her with the promise to bring the jar back for a refill.

The Pineapple I used my Sweet Feed Mix also 100p and it truned out good. I used fresh pineapple but the syrup stage takes work. I ended up crushing most of pineapple into pulp then adding the sugar. That seems to do well. The flavor turned out better than I expected. I add a little more molasses to my ferment and the flavor carried thru in the drink. Yummy.

So 2 days later my girl showed back up with empty jar in hand. After finishing off my sampler pint of pineapple there went the other qt of pineapple. I think its safe to say she is hooked. And yes the name holds true they did drop each time. Her little joke is "This is the deposit on the jar I'm taking with me when I leave." Hey, who am I to argue?

I currently have 4 qts of both strawberry and pineapple pickeling. I hope they finish before she shows up again.

Now my worry is that she will be stopping by more frequently and I will not have enough time to spend with my still, thus having no more SPD for my girl. Oh what a delima. Maybe I'll just build a bigger still!

I took a short cut. I bought Welch's Strawberry blast and used that with everclear... best stuff ever...

Until...

I bought strawberry daiquiri mix and used that with everclear...THIS is the best I've ever tasted.

Thinking now of fermenting some wine with the daiquiri mix and then fortifying it up to 40 proof... my wine only comes out at 15% or 30 proof... I'll just add enough to make it 20% and it should be even better.

BTW...my spd is only mixed to 40 proof, not 80... it's got to taste good after all. :)

OK, so now I cant make the strawberry or pineapple fast enough. Guess it was a hit. However, I am having issues with the blueberry. I bought fresh blueberries and washed them, then froze them. Later added them to 100 proof UJ and let them sit for about a week. It came out with good color and a great blueberry after taste. I have added 2 batches of the syrup but now I am noticing a thin layer of chakie film on the top of the liquid. My first guess was maybe yeast from the berries so i added some 140 proof. The taste is still ok but the film hasn't gone away. Anyone have any Ideas???

Try either using a paper towel to absorb the liquid on the surface and it will pick up the scum at the same time and/or run it through a coffee filter

Ok. I usually run the spd thru a tee shirt then coffee filter when complete and will do the same to this. Is it still safe to drink? What do you think caused it? Tasted it again and notice a bitter after taste now.

Either broken seeds or stems attached would be my best guess

ploom) waxes and yeasts (oleanolic acid) and is naturally produced by the plants. It is antibacterial.???

I am confused about how to make it 40 abv if the liquid is thick with syrup won't the hydrometer be incorrect?

yes. best to just estimate based on the volumes and proof of your starting likker. Water it to taste, after all youre making it to satisfy your tastebuds, not an arbitrary number anyway ;)
